This is one - a truly outstanding Cabernet from Seven Hills. Rather than tuck it into my upcoming Deep Dive into a different topic, I think it’s a wine you should jump on now. I just re-tasted this bottle on the FOURTH day after I opened it and it is drinking like a dream. So it can certainly quality as a long term cellar wine, but if you decant it you can glug away right away. I include a score and a link for purchase.
Seven Hills 2020 Cabernet Sauvignon
This classic, stylish Walla Walla Cab is a six Bordeaux grape blend with Petit Verdot and Malbec the most significant non-Cabernet contributors. It's full-bodied and seamless, potently aromatic with dark notes of espresso, char, tobacco and dark chocolate. Six different vineyards contributed to the blend, but nine tenths of the wine comes from old blocks of Seven Hills and the McClellan estate vineyard. 1800 cases were made so it’s widely available, a well-structured wine with a decade or more of aging potential.
